Preheat oven to 350℉.
Soak dates in warm water for 15 minutes.
In blender add dates after you drain them, 1 cup of oats, raw honey, coconut oil. Blend for 1-5 minutes.
Add other 1 cup of oats, coconut sugar, cinnamon and vanilla to blender and keep blending. If needed scrap the sides down with a spatula until fully blended into a paste.
Lay out plastic wrap about 2 feet long on your counter or table. Use left over coconut oil to spread through it - making it a non stick surface.
Add the bar dough along the length of it, and shape into a log about 1 inch wide.
Cut them about 4 inches long and add them to a baking sheet with parchment paper.
Bake for 10 minutes at 350℉
