Vanilla Wafers

This sweet treat is refined sugar free and sweetened with raw honey, making it clean and guilt free!

Ingredients
  

  • cup all-purpose flour I used Einkorn Flour
  • ¾ tsp baking powder
  • ½ tsp sea salt
  • ½ cup unsalted butter room temp or melted
  • ½ cup honey
  • 1 egg
  • 1 tbsp vanilla extract
  • 2 tbsp whole milk or any of your choice

Instructions
 

  • Preheat oven to 350℉.
  • In a medium bowl using a whisk mix together flour, baking powder and salt then set it aside.
  • Using a stand mixer or hand mixer, cream together butter and honey on medium speed until fluffy.
  • Add the egg, vanilla and milk to the honey/butter mixture. Blend, until fluffy again.
  • Add the flour mixture to the bowl and mix on low until fully incorporated into the batter.
  • Place the batter into the fridge and chill for 15 minutes. Line a baking sheet with parchment paper ready while you wait.
  • Add the mixture into a zip lock and cut one side (to makeshift a pipping bag) and pipe put about 1/2 teaspoon size dollops onto the parchment paper lined baking sheet.
  • Bake for 15 minutes, or until they are golden brown.
  • Let complete cool & enjoy!

Storage:

  • Store in airtight container on counter for 10 days.
