Sweet Potato Cracker

Sweet Potato Garlic and Herb Crackers

The perfect on the go snack for you and your kiddos!

Servings 60 crackers

Ingredients
  

  • cup all-purpose flour I used Einkorn
  • ½ tsp aluminum free baking powder
  • 1 cup sweet potato puree Bake potato at 400℉ for 1 hr, then puree
  • 3 tbsp grass-feed butter melted
  • 1 tsp spices of choice I used Garlic + Herb seasoning
  • ½ tsp sea salt
  • ¼ cup grated cheese I used raw cheddar cheese, Raw Farms brand

Instructions
 

  • Start by combining all your ingredients in a mixing bowl. First, use a spoon to blend them, then get in there with your hands and knead until a dough forms. If it feels too sticky, just add more flour a tablespoon at a time. Once it’s ready, cover the bowl and pop it in the fridge for at least an hour.
  • Preheat your oven to 350°F. Divide the dough into two portions, then roll each out on a floured surface to about 1/8 inch thick. Feel free to adjust the thickness based on how crispy you like your crackers!
  • Next, use a sharp knife, pizza cutter, or a fluted pastry wheel to cut the dough into your favorite shapes—squares, rectangles, or even fun cookie shapes!
  • Transfer the parchment paper with the cut crackers onto a prepared baking sheet, making sure to leave a little space between each one.
  • Bake those beauties in the preheated oven for 10 minutes, then flip them over and bake for another 10 minutes, until they’re golden brown and crispy around the edges. Keep an eye on them towards the end to make sure they don’t burn!
  • Once they’re done, take them out of the oven and let them cool completely. Enjoy your homemade snacks!
