Protein Snickerdoodle Cookies
The sweetest late night snack or lunchbox staple, sneak in protein + vitamins!
Cookies:
- 1/4 cup oats blend to make oat flour
- 1/2 cup peanut butter or nut butter of choice
- 3/4 cup protein powder unflavored, see below for my favorite
- 1/3 cup maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
Coating:
- 1 tbsp coconut sugar
- 1/2 tsp cinnamon
Preheat oven to 350℉ and prepare a baking sheet with parchment paper.
Mix together all cookie ingredients in a bowl, until you form a cookie dough.
Roll dough into 14 separate balls and then coat each one in cinnamon sugar mixture.
Place each ball on the baking sheet and press down to flatten a bit.
Bake the cookies for 9 minutes, let them cool on a wire rack and enjoy!
