Protein Snickerdoodle Cookies

The sweetest late night snack or lunchbox staple, sneak in protein + vitamins!

Ingredients
  

Cookies:

  • 1/4 cup oats blend to make oat flour
  • 1/2 cup peanut butter or nut butter of choice
  • 3/4 cup protein powder unflavored, see below for my favorite
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Coating:

  • 1 tbsp coconut sugar
  • 1/2 tsp cinnamon

Instructions
 

  • Preheat oven to 350℉ and prepare a baking sheet with parchment paper.
  • Mix together all cookie ingredients in a bowl, until you form a cookie dough.
  • Roll dough into 14 separate balls and then coat each one in cinnamon sugar mixture.
  • Place each ball on the baking sheet and press down to flatten a bit.
  • Bake the cookies for 9 minutes, let them cool on a wire rack and enjoy!

Storage:

  • Store in airtight container at room temperate for 7 days.
