Chop off the head of the strawberries.
Add strawberries, water, honey, lemon juice into a blender and blend until it's smooth.
Add the gelatin to the mixture and allow the gelatin to "bloom" or "wrinkle" for 5 minutes in a small pot.
Turn stove top on to medium and place pot on, whisk until gelatin completely disolved (about 5 minutes).
Add mixture to desired glass cup and store in fridge for 2 hours.
Take out and enjoy!
