Preheat the oven to 350 ℉ degrees
Using a stand or hand mixer, add butter and coconut sugar to the bowl and mix until creamy.
Add the egg and vanilla, and continue to mix until all the ingredients are well mixed together
In another medium sized bowl, mix together the flour, baking soda and the salt.
Fold the dry ingredients into the butter mixture until you form a dough. Use your hands to bring it together into a ball and cover it in plastic wrap. Place in refrigerator while you make filling.
In a medium sized pan add your figs, strawberries, honey and lemon juice over medium heat. Stir until figs are soft.
Add the fig mixture to blender or food processor and blend until jam like.
Take your dough out of the fridge, cut it in half, form it into two small rectangles. Hand roll one half using parchment paper on the bottom (lightly floured) and top.
Use a knife to form a rectangle and cut off (small) excess on the sides. Using a spoon add half of the filling on the dough and use the parchment paper to roll it together and "glue" it shut.
Roll it over so the "glued" portion is on the bottom, and cut into even fig bars (about 6-8, depending on the size).
Place them on a baking sheet and bake for about 13-15 minutes and golden brown.
