Healthy Yogurt Cake

This healthy recipe is the best way to take yogurt on the go for your kids in the lunch boxes. I travel with this snack all the time, it's so delicious!

Equipment

  • Mixing Bowl
  • Whisk
  • Spatula
  • Loaf Pan

Ingredients
  

  • cups All-purpose flour i used Einkorn
  • 2 tsp Baking powder
  • 1 Pinch of salt
  • ½ cup Honey
  • ½ cup Plain whole milk yogurt (greek would works as well)
  • 3 Large eggs
  • ¼ tsp Vanilla extract
  • ½ cup Coconut oil

Instructions
 

  • Preheat oven to 350℉.
  • In a large mixing bowl, add honey, eggs and whisk until completely mixed.
  • Add the yogurt and the vanilla and mix until combined. Next, add the flour, baking powder and salt, mix again until the batter is smooth.
  • Melt the coconut oil, using a spatula, fold the coconut oil into the batter.
  • Grease a loaf pan with butter and pour the batter into it.
  • Bake the loaf for 40-50 minutes, check with a toothpick or knife until it comes out clean.
  • Let the loaf cook on a wire rack and enjoy!

Store:

  • Store in fridge in air tight container for up to 5 days.
