Healthy Yogurt Cake
This healthy recipe is the best way to take yogurt on the go for your kids in the lunch boxes. I travel with this snack all the time, it's so delicious!

- 1½ cups All-purpose flour i used Einkorn
- 2 tsp Baking powder
- 1 Pinch of salt
- ½ cup Honey
- ½ cup Plain whole milk yogurt (greek would works as well)
- 3 Large eggs
- ¼ tsp Vanilla extract
- ½ cup Coconut oil
Preheat oven to 350℉.
In a large mixing bowl, add honey, eggs and whisk until completely mixed.
Add the yogurt and the vanilla and mix until combined. Next, add the flour, baking powder and salt, mix again until the batter is smooth.
Melt the coconut oil, using a spatula, fold the coconut oil into the batter.
Grease a loaf pan with butter and pour the batter into it.
Bake the loaf for 40-50 minutes, check with a toothpick or knife until it comes out clean.
Let the loaf cook on a wire rack and enjoy!
