Cottage Cheese Brownies

Equipment

  • 8x8" Pan
  • Parchment paper
  • Blender
  • Medium Bowl
  • Whisk

Ingredients
  

  • ¾ cup cottage cheese
  • 2 egg whites
  • 1 tsp vanilla extract
  • ¼ cup sugar-free chocolate chips
  • ½ cup unsweetened cocoa powder
  • ½ cup raw honey
  • ¾ cup rolled oats, blended
  • 1 tsp baking powder

Instructions
 

  • Preheat oven to 350℉ and line an 8x8" pan with parchment paper.
  • Blend the oats down to a powder in a blender and melt the chocolate chips in a small sauce pan or in a bowl in the microwave
  • Add all ingredients to a medium sized bowl and mix well with a whisk
  • Pour mixture into the 8x8" lined pan and bake for 25 minutes. Let it cool and enjoy!

Store:

  • Store in refrigerator for up to 4-5 days.
