Healthy Protein Cheesecake
A nutrient dense and high in protein sweet treat. The crust is coconut sugar and einkorn flour, cannot got wrong with these clean ingredients.
Equipment
- Blender
- Large Muffin pan or small ramekins
- Spatula
Ingredients
Cheese Cake
- ⅔ cup cottage cheese with live cultures
- ⅔ cup whole milk or greek yogurt
- 1 egg
- ¼ cup raw honey
Crust
- 1 cup all-purpose flour I used Einkorn
- ¼ cup coconut sugar
- 3 tbsp butter melted
- 1 tsp vanilla
Instructions
- In a medium bowl mix all of the crust ingredients until it's a crumbly mixture (use your hands).
- Take the crust mixture and pat it down evenly amongst your small cake molds.
- Blend all of the cheese cake ingredients in blender until creamy.
- Pour cheesecake mixture on top of your crust (as evenly as possible between your molds).
- Bake at 300℉ for 20 minutes.
- Let rest and enjoy!
Store: In the refrigerator for up to 1 week.
