If you’ve been here for a while, you know I’m always looking for ways to get more nourishment in, without more work. These high-protein French toast cups are one of those recipes that have become a total staple in our home especially for my girls’ lunchboxes.
They feel like a treat, but they’re packed with clean protein, healthy fats, and simple ingredients you probably already have in your kitchen. I started making these when I wanted something fun, kid-friendly, and freezer-ready that still checked all my “mom boxes”: nourishing, easy, and mess-free.
Regular French toast can be loaded with sugar and leave kids crashing by afternoon. These cups are a game-changer because I mix in unflavored protein powder that has sneaky beef organ powder for added to include iron, zinc, and B12 (they’ll never taste it, promise!).
The best part? They bake up in muffin tins, so there’s no flipping and no mess and my girls think they’re mini muffins.
Perfect for:

I love adding 2–3 cups in my girls’ lunchboxes with some fruit, nut butter for dipping, and maybe a few clean chocolate chips as a fun surprise. They taste amazing warm or cold — and they never come back home.
Make a double batch and freeze half. Pop them in the air fryer or oven in the morning and breakfast (or lunch) is done in 5 minutes. It’s one of my favorite ways to simplify our mornings without compromising on nourishment.
