Sweet Potato Cookie

This delicious little cookie is nutrient dense and your kiddos will love it.
Prep Time 10 minutes
Cook Time 15 minutes
Servings 1

Ingredients
  

  • 1 cup smashed sweet potato precook at 400F for 1 hr.
  • 1/2 cup all-purpose flour I used Einkorn
  • 2 tbsp raw honey
  • 1 tsp baking soda
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 F degrees.
  • In a medium bowl, combine all ingredients and mix it all well.
  • Using a spoon or ice cream scooper, add to a baking sheet lined with parchment paper.
  • Bake for 15 minutes or until lightly golden brown.
  • Let them cool and enjoy!

Storage:

  • Store in fridge for 4-6 days.
