
Friends! Did you know that store-bought Vanilla Wafers are packed with Niacin (a known carcinogen), canola and sunflower oil, high fructose corn syrup, refined sugar, natural flavors, and a whole bunch of other stuff I wouldn’t want my own kiddos munching on? So, I took matters into my own hands and recreated this beloved snack with all the good stuff and none of the junk! And guess what? You can do it too!

Vanilla Wafers
Equipment
- Mixing Bowl
- Spatula
- Whisk
- Baking Sheet
- Zip Lock Bag
Ingredients
- 1½ cup all-purpose flour I used Einkorn Flour
- ¾ tsp baking powder
- ½ tsp sea salt
- ½ cup unsalted butter room temp or melted
- ½ cup honey
- 1 egg
- 1 tbsp vanilla extract
- 2 tbsp whole milk or any of your choice
Instructions
- Preheat oven to 350℉.
- In a medium bowl using a whisk mix together flour, baking powder and salt then set it aside.
- Using a stand mixer or hand mixer, cream together butter and honey on medium speed until fluffy.
- Add the egg, vanilla and milk to the honey/butter mixture. Blend, until fluffy again.
- Add the flour mixture to the bowl and mix on low until fully incorporated into the batter.
- Place the batter into the fridge and chill for 15 minutes. Line a baking sheet with parchment paper ready while you wait.
- Add the mixture into a zip lock and cut one side (to makeshift a pipping bag) and pipe put about 1/2 teaspoon size dollops onto the parchment paper lined baking sheet.
- Bake for 15 minutes, or until they are golden brown.
- Let complete cool & enjoy!
Storage:
- Store in airtight container on counter for 10 days.
Any suggestions on how to make these gluten free? Would subbing a gluten free all purpose flour be 1-1 in this recipe? Thanks!
