Little Bites Dupe Recipe with clean Ingredients

Every time I shop at Costco with my daughter she sees the box of Little Bites and will ask if they’re good for us and if we can get them. After turning them around and seeing the long list of unnecessary, inflammatory ingredients I explain to her that these are not a good way to nourish our bodies, so no.

Last week, we passed them and this time she asked if i knew how to make these at home with good ingredients – I had a big ol’ DUH moment and said absolutely yes! Better yet, how would she like to help me remake these?! She was thrilled, so way I and man did we have fun. They turned out amazing and I made two batches, one to indulge in right away and one to freeze!

Costco Little Bites Muffin Dupes

These taste so much better than the packaged ones!

Servings 24 muffins

Ingredients
  

  • 1 cup all-purpose flour i used Einkorn
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup yogurt greek or regular
  • cup maple syrup
  • ¼ cup unsalted butter melted, cooled
  • 2 eggs
  • 2 tsp vanilla
  • 3/4 cup chocolate chips i used this brand with coconut sugar

Instructions
 

  • Preheat oven to 375℉ degrees and line your mini muffin cup trays – set aside.
  • In a medium bowl mix your dry ingredients – flour, baking powder, baking soda, and salt. Mix well.
  • In another medium bowl mix your wet ingredients, yogurt, maple syrup, eggs, butter and vanilla. Combine well.
  • Add your went ingredients into your dry ingredients and mix well until completely combined.
  • Add the chocolate chips and mix. Using a small spoon or ice cream scooper, fill your mini muffin tray. Don't over fill.
  • Bake for 10 minutes, or until golden brown.
  • Let them completely cool and serve!

Storage / Subs:

  • To make them egg free, add an extra 1/2 cup of milk and use a bit more baking soda.
  • Gluten free flour will also work, sub 1:1.
  • You can freeze in freezer bag for up to 3 months. For day to day consumption, I store them on the counter in an airtight container.
