
This snickerdoodle cookies are full of protein and so delicious! They made the perfect late night snack for our Labor Day trip this weekend.
Protein Snickerdoodle Cookies
The sweetest late night snack or lunchbox staple, sneak in protein + vitamins!
Ingredients
Cookies:
- 1/4 cup oats blend to make oat flour
- 1/2 cup peanut butter or nut butter of choice
- 3/4 cup protein powder unflavored, see below for my favorite
- 1/3 cup maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
Coating:
- 1 tbsp coconut sugar
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350℉ and prepare a baking sheet with parchment paper.
- Mix together all cookie ingredients in a bowl, until you form a cookie dough.
- Roll dough into 14 separate balls and then coat each one in cinnamon sugar mixture.
- Place each ball on the baking sheet and press down to flatten a bit.
- Bake the cookies for 9 minutes, let them cool on a wire rack and enjoy!
Storage:
- Store in airtight container at room temperate for 7 days.
