Homemade Fig Bars

These Fig Bars will certainly become your kid’s new favorite snack!

And they taste WAY better than store bought ones. I wanted to remake the “clean” version of the fig bars from the store, which are not actually healthy and also cost an arm and a leg. Let me tell you, these are incredible!

Homemade Fig Bars

These taste better than the store bought one! Plus, no refined sugar or seed oils.
Servings 10 Bars

Equipment

  • Hand or stand mixer
  • Rolling Pin
  • Bowl + Spoon
  • Medium Sauce Pan
  • Blender
  • Knife
  • Parchment paper
  • Baking Sheet

Ingredients

The Dough

  • 4 tbsp Butter at room temp
  • 1 Egg
  • ½ tsp Baking soda
  • 1 ½ cup All-purpose flour I used Einkorn
  • 2 tbsp Organic coconut sugar
  • 1 tsp Vanilla extract
  • ¼ tsp Salt

The Filling

  • 1 cup Strawberries, cut in halves or homemade strawberry jam
  • 2 tbsp Lemon juice
  • 1 cup Organic figs I used Turkish figs
  • 1 tbsp Raw honey

Instructions

  • Preheat the oven to 350 ℉ degrees
  • Using a stand or hand mixer, add butter and coconut sugar to the bowl and mix until creamy.
  • Add the egg and vanilla, and continue to mix until all the ingredients are well mixed together
  • In another medium sized bowl, mix together the flour, baking soda and the salt.
  • Fold the dry ingredients into the butter mixture until you form a dough. Use your hands to bring it together into a ball and cover it in plastic wrap. Place in refrigerator while you make filling.
  • In a medium sized pan add your figs, strawberries, honey and lemon juice over medium heat. Stir until figs are soft.
  • Add the fig mixture to blender or food processor and blend until jam like.
  • Take your dough out of the fridge, cut it in half, form it into two small rectangles. Hand roll one half using parchment paper on the bottom (lightly floured) and top.
  • Use a knife to form a rectangle and cut off (small) excess on the sides. Using a spoon add half of the filling on the dough and use the parchment paper to roll it together and "glue" it shut.
  • Roll it over so the "glued" portion is on the bottom, and cut into even fig bars (about 6-8, depending on the size).
  • Place them on a baking sheet and bake for about 13-15 minutes and golden brown.

Store:

  • Stored on counter top in a glass airtight container for about 5-7 days or the refrigerator for up to 2 weeks.

My kids would love these! Did you use fresh figs or dried figs? Thanks so much for the recipes and keeping them free of refined added sugars!
