Sneaky veggies are the best!
My new favorite quick & clean lunch for my girls, heck even for me! This Mac & Cheese sauce turned out delish and nothing I appreciate more than a hidden veggies for those picky toddler years.

Veggie Packed Mac & Cheese
I love a sneaky veggie & these are delicious!
Equipment
- Large Pot
- Blender
- Sauce Pan
Ingredients
- 1 cup butternut squash cooked
- 1 cup cauliflower cooked
- 1 cup carrots cooked
- 1 cup milk I use raw, any will work
- 4 oz cream cheese
- 1½ cup cheddar cheese Shred from a block of cheese for cleaner ingredients
- salt + pepper to taste
- cooked pasta
Instructions
- In a large pot, add cauliflower, butternut squash and carrots and boil until they are all tender (check with fork)
- Add the cooked vegetables to a blender and puree them. Add a little milk if needed to puree them well.
- Un a sauce pan, add the puree mixture over medium-high heat. Also, add the milk that is left, the cubed cream cheese and the shredded cheddar cheese.
- Mix well and let it simmer until all cheese is melted.
Eat or Freeze
- I like to make a large batch of these and freeze into 1 cup molds. I pull a block out at a time when I need a quick, nutritious lunch.
- If you want to eat right away, boil some pasta and mix the sauce into the pasta once cooked
